ingredients:
- 1 serving deep-fried breaded pork
- tenderloin cutlets
- or deep–fried breaded pork cutlets
- 1 serving steamed rice
- 60 g cabbage (optional)
- 90 g demi-glace sauce
- a little salt

step 1:
If using the deep–fried breaded pork cutlets, slice them across into 2 cm. strips.

step 2:
If using cabbage, shred it. Add the salt to the demi-glace sauce in a small pan and warm up.

step 3:
Serve the cabbage (optional) and pork cutlets over the steamed rice. Pour the sauce over the pork cutlets.

comment:
This katsu-don is very diffrent fom the typical katsu-don recipe cooked throughout Japan. However, the demi-glace sauce used in this recipe suits pork cutlets and rice, and gives it a good taste. It is popular in Okayama City in Okayama Prefecture (demi-katsu-don) and Nagaoka City in Niigata Prefecture (yōfū-katsu-don). Okayama Prefecture is in the Chūgoku region in the western part of mainland Japan. Niigata Prefecture is in the middle of mainland Japan on the Sea of Japan side.
