ingredients:
- 3 1/2 ounces thinly sliced lean pork
- 2 1/2 ounces cucumber pickled in sake lees
- 1 teaspoon salad oil
step 1:
Put the pork in a medium-sized container. Spread half of the sake lees mixture (from Cucumber Pickled in Sake Lees) over the one side of the pork.
step 2:
Turn the pork over and spread the remaining sake lees mixture over the opposite side. Cover with some plastic wrap and place the container in the refrigerator for half a day to 1 day.
step 3:
Remove from the refrigerator and wipe lightly with a paper towel to remove any sake lees mixture. Heat the oil in a frying pan. Sear the pork on low heat until it changes color. Turn over and sear the opposite side on low heat until it changes color.
comment:
Sake lees soaks well into the pork even in half a day and makes it very soft.
