Japanese-Style Fried Rice with Mushrooms

  • 3 ounces package shimeji mushrooms
  • 2 shiitake mushrooms
  • 3 ounces package enoki (snow puff)
  • mushrooms
  • 2 servings steamed rice
  • 2 garlic cloves
  • 2 teaspoons soy sauce
  • 2 teaspoons soup stock powder (chicken, Chinese or bonito) (optional)
  • 1/2 tablespoon salad oil
  • a little salt
  • a little pepper

Slice the garlic. Wipe the shiitake mushrooms with a wet paper towel. Cut off the stems and slice the caps.

Cut off the roots of the shimeji mushrooms. Cut off the roots of the enoki mushrooms 1 in. from the end and cut in half.

Heat the salad oil in a frying pan over a medium flame and sear the garlic.

Add the mushrooms and sear for 2 minutes.

Add the cold rice. Sear while mixing for 1 minute. Add the soy sauce, soup stock powder (optional), salt and pepper, and sear for another minute.

Kinoko chā-han
