simmered spinach, chicken & egg
- 26 ounces fresh spinach
- 14 ounces boneless chicken thigh
- 4 1/2 tablespoons soy sauce
- 3 tablespoons sugar
- 2 eggs
Cut off the stems of the spinach and wash. Cut spinach into 2 in. long pieces.
Cut the chicken into bite-size pieces.
Put the chicken, spinach, sugar and soy sauce in a pan. Cover and simmer on medium heat.
Simmer until the chicken changes color. Beat the egg and add to the pan. Cover again.
Cook until the egg is your favorite consistency.
The combination of the chicken, spinach, egg, sugar and soy sauce is delicious. Plenty of spinach for this recipe can be eaten; it is a healthy dish.
