ingredients:
- 3 1/2 ounces fresh long green onions (negi)
- or young leeks
- 2 ounces package enoki (snow puff) mushrooms
- 3 ounces package shimeji mushrooms
- 2/3 ounce butter
- 2 teaspoons soy sauce
- a little salt
- a little pepper

step 1:
Wash the long green onions (or leeks). Cut into about 2 in. wide pieces.

step 2:
Cut off the roots of the enoki mushrooms 1 in. from the end and cut in half. Cut off the roots of the shimeji mushrooms.

step 3:
Heat the butter in a frying pan and sear the long green onion (or young leek) pieces on medium heat for 1 minute.

step 4:
Add the mushrooms and sear for 1 minute.

step 5:
Add the soy sauce, salt and pepper. Mix them.

comment:
Soy sauce and butter make the long green onions and mushrooms delicious. The long green onions are rich in vitamins A and C, and in potassium, while enoki and shimeji mushrooms are rich in vitamins B1, B2 and D, and in dietary fiber.
