Potato & Wakame Miso Soup

Soak the dried wakame seaweed in the water for about 15 minutes to reconstitute it. Drain the water.

Peel the potato and cut in half. Cut each half into 1/4 in. wide slices.

Boil the bonito soup stock and add the potato slices and wakame.

After the potatos become soft, put some stock into a ladle. Add the miso and stir with chopsticks until it is dissolved. Stir into the soup. Remove from heat.

This miso soup is good for your health. Potatoes are low in calories and contain a lot of vitamins C, B1 and B2. The dried wakame has a lot of dietary fiber and calcium. The salty wakame suits the potatoes well. Please try this dish.
