Cucumbers with Vinegar and Soy Sauce

  • 2 (about 1/2 pound) cucumbers
  • 1 tablespoon vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar

Slice the cucumber diagonally.

Put the soy sauce, vinegar and sugar in a bowl. Mix.

Add the cucumber slices and mix very well. If you like soaked cucumber, chill for 1 hour to 1 day in the refrigerator.

Kyūri no sujōyu ae

comment:

Vinegar and soy sauce suit cucumber very well because cucumber is plain tasting. If eaten immediately after mixing, the texture is crisp. When soaked for a long time, it is moist.
