onion & enoki mushrooms miso soup

Peel the onion and slice thinly.
Cut off the roots of the enoki mushrooms 3 cm. from the end and cut in half.
Boil the bonito soup stock and add the onion and enoki (snow puff) mushrooms.
After the onions and mushrooms become soft, put some stock into a ladle. Add the miso and stir with chopsticks until it is dissolved. Stir into the soup. Remove from heat.
The onion becomes sweet, and the savory taste of the enoki mushrooms is added to the soup. It is very delicious.
