seared eggplant & green pepper

ingredients:
- 300 g eggplants
- 150 g green pepper(s)
- 1 tablespoon sugar
- 1 tablespoon soy sauce
- 2 tablespoons salad oil

step 1:
Cut the stalks off the eggplants and then cut the eggplants in half lengthwise. Slice the eggpant halves diagonally into 2 cm. pieces.

step 2:
Cut the green pepper(s) in half and remove seeds. Cut diagonally into half.

step 3:
Heat the salad oil in a pot and sear the eggplant on both sides for a couple of minutes on medium-low heat. Add the green pepper and sear for a couple of minutes.

step 4:
Add the sugar and soy sauce.

comment:
The sweetened soy sauce suits eggplant which has a plain taste and green pepper which has a bitter taste.
