Remove the core from the cabbage and cut the cabbage into bite–sized pieces. Cut the carrots into julienne slices.

Peel the onion and cut in half. Cut each half into 1 cm. wide slices.

Cut the pork (ham) into bite–sized pieces.

Heat the salad oil in a frying pan and sear the pork (ham) on medium heat. Add the salt.

After the pork changes color, add the cabbage, carrot and onion. Saute and stir them for 5 minutes. Add the cooked thick white noodles (udon) and saute and stir them 3 more minutes.

Add the soy sauce and pepper. Saute and stir them for another minute.


Serve in a dish. If you like, sprinkle bonito flakes on top.


Fried thick white noodles (udon) is a Japanese-style fried noodle dish. This recipe has a good balance of noodles, meat and vegetables. Fried thick white noodles originated in Kitakyūshū City in Fukuoka Prefecture.
