Okinawa-Style Fried Thin White Noodles

Chop the scallions (or chives).

Pour the water into a pan. Bring to a boil and add the dried thin white noodles (dried sōmen). Boil for 2 minutes, or follow the cooking instructions on the bag.

Add a cup of cold water to the pan if the water starts to boil over. After boiling, drain the noodles in a colander and quickly run cold water over them.

Because too much starch and salt on the noodles can make them taste slimy, wash them with your hands under cold running water to remove any extra starch.

Heat the salad oil in a frying pan and sear the noodles on medium heat.

Add the salt and soy sauce. Saute and stir them for a couple of minutes.

Sōmin-tashiyā

Serve in a dish. Sprinkle the chopped scallions (or chives) and bonito flakes (optional) over the top.

This recipe is very easy and tastes good. This dish is very popular in Okinawa. Okinawa is a small island and, being located about 645 km from the mainland, is the most southwest of prefectures in Japan. The Japanese word for this dish, sōmin-tashiyā, reflects the Okinawa dialect where sōmen is referred to as sōmin.
