Chop the leek (or green onion).
Pour the water into a big pan. Bring to a boil. In two separate pans, pour the Chinese soup stock (or chicken broth) and bonito soup stock. Also bring these to a boil. Remove from the heat.
Pour 1 Tbsp. soy sauce into each serving bowl. Add half of the boiled Chinese soup stock (or chicken broth) and bonito soup stock to each bowl.
Add the ramen noodles (or Chinese noodles) to the boiled water. Boil for 1 to 4 minutes (follow the cooking instructions on the bag). After boiling, drain the noodles in a colander and quickly add to the serving bowls.
Place the Japanese-style char siu or ham, chopped leek (or green onion) and menma over the noodles.
Tokyo-style ramen is an orthodox ramen. This dish has a simple soy sauce soup, and the taste is very delicious.
