ingredients:
- 150 g boneless chicken breast
- 100 g spinach
- 60 g shredded mozzarella cheese
- 1 tablespoon red miso
- a little salt
- 20 g butter
- 300 ml milk
- 2 tablespoons flour
- 100 g macaroni
- 1 liter water for boiling macaroni
step 1:
Cut off the stems of the spinach and cut into about 5 cm. wide pieces. Cut the chicken into bite-size pieces.
step 2:
Pour the 1 liter of water into a pan. Bring to a boil and add the macaroni. After boiling, drain the macaroni in a colander.
step 3:
Put the butter in a frying pan and sear the chicken for about 2 minutes on medium heat. After it changes color, sear the opposite side for about 2 minutes. Add the spinach and sear.
step 4:
Preheat the oven to 250°C. Add one fourth of the flour and mix. Add the remaining flour gradually into the mixture in fourths and mix in the same manner each time.

Add one fourth of the milk and mix. Add the remaining milk gradually into the mixture in fourths and mix in the same manner each time.
step 6:
After boiling, put some sauce into a spoon. Add the red miso and stir with chopsticks until it is dissolved. Stir into the soup.
step 7:
Add the macaroni and salt and mix.
step 8:
Place in a fireproof dish. Spread the shredded mozzarella cheese over it. Bake in the oven at 250°C for 12 minutes.
comment:
When you have poor digestion, you have no appetite. But when getting better, little by little we want to eat our usual food. However if we suddenly eat food which is bad for digestion, we can become worse. This gratin recipe is good for digestion. The red miso becomes mild tasting and it suits macaroni, chicken and spinach well. The combination of cheese and miso sauce is good and very delicious.
