Scallops & Green Soybeans Seasoned Rice

ingredients:

  • 140 g scallops
  • 200 g fresh green soybeans
  • (or frozen green soybeans)
  • 280 g rice
  • 580 ml water
  • 2 tablespoons soy sauce
  • a little salt (if using fresh green soybeans)
Step 1

Cut the scallops into 1.5 cm. pieces.

If using frozen green soybeans, defrost them and remove the green beans from the pods.

If using fresh green soybeans, wash and drain them. Bring 240 ml of the water to a boil, and add the salt and green soybeans. Bring to a boil again, and boil for three to four minutes.

Drain the soybeans in a colander and remove the green beans from the pods.

Wash the rice. Add the remaining 340 ml of water, scallops, green soybeans and soy sauce. Switch on the rice cooker.

After cooking, wait 5 minutes before stirring the rice mixture.

Hotate to edamame no takikomi-gohan

The umami of the scallops soaks into the rice and is delicious. Green soybeans suit the scallops well. Please try this dish.
