ingredients:
- 4 yellowtail fillets
- 1 tablespoon salad oil
teriyaki sauce:
- 2 tablespoons soy sauce
- 2 tablespoons sugar, sweet sake for seasoning (mirin) or honey
- 2 tablespoons sake or water

step 1:
Make the teriyaki sauce in a bowl.

step 2:
Heat the oil over a medium flame and sear each side of the yellowtail for about 2 minutes.

step 3:
Reduce to a low flame, and add the teriyaki sauce. Simmer both sides for about 2 minutes.

Remove the fillets from the pan. If you desire a thicker sauce, simmer for a couple of minutes. Then, pour the teriyaki sauce over the fillets.
