Seared Eggplant & Green Pepper
Ingredients

  • 10 1/2 ounces eggplants
  • 5 ounces green pepper(s)
  • 1 tablespoon sugar
  • 1 tablespoon soy sauce
  • 2 tablespoons salad oil
Step 1

step 1:

Cut the stalks off the eggplants and then cut the eggplants in half lengthwise. Slice the eggpant halves diagonally into 1 in. pieces.

Cut the green pepper(s) in half and remove seeds. Cut diagonally into half.

Step 3

Heat the salad oil in a pot and sear the eggplant on both sides for a couple of minutes on medium-low heat. Add the green pepper and sear for a couple of minutes.

Step 4

Add the sugar and soy sauce.

The sweetened soy sauce suits eggplant which has a plain taste and green pepper which has a bitter taste.
