step 1:
Hull shell and devein the shrimps. Cut off the roots of the shimeji mushrooms. Chop the garlic clove into fine pieces.

step 2:
Cut the baguette into thin slices. Mix the soy sauce, red miso and sake in a small bowl.

step 3:
Put the olive oil and garlic in a frying pan and simmer the garlic for 1 minute.

step 4:
Add the shrimps and shimeji mushrooms. Simmer for 5 minutes on low heat.

step 5:
Add the miso mixture and mix.

Serve by either dipping the baguette slices into the ahijo mixture or putting the ahijo on top of the baguettes.

Although preparing the shrimp is a bit of a bother, the rest of this recipe is easy. The garlic-flavored red miso suits the shrimps surprisingly well and makes this dish delicious. Please try it.
