- 2 boiled eggs
- 1 ripe avocado
- 1 ounces shredded mozzarella cheese
- 4 ounces Alfredo sauce
- 2 servings steamed rice
- 1 tablespoon butter
- a little salt
- a little pepper
step 1:
Slice the boiled eggs. Cut the avocado in half lengthwise then peel. Cut each half into 1/2 in. wide slices.
step 2:
Spread the butter in two fireproof dishes. Place the steamed rice in the dishes and place the avocado slices and boiled eggs over the rice. Sprinkle with the salt and pepper. Preheat the oven to 480 °F.
step 3:
Pour the Alfredo sauce over the rice. Spread the shredded mozzarella cheese over the sauce. Bake in the oven at 480 °F for 10 minutes.
