Tofu is bean curd made from soybeans. It is low–calorie and popular as a health food. Tofu is classified into two basic types – momen (firm) and kinugoshi (silken/soft). Grilled tofu (yaki-dōfu) is made from grilling both sides of momen tofu. Grilled tofu is often used in sukiyaki.
Aka-endomame is almost always used as a topping for mitsumame and anmitsu (a Japanese dessert). Aka-endomame is dried peas, and the outer layer of the skin is red. The appearance and taste of boiled aka-endomame are almost exactly like boiled red marrowfat peas.
