Beat the eggs, and mix in the salt and pepper.

Mix the fermented soybeans (nattō) about twenty times until stringy and sticky.

Mix the egg mixture and fermented soybeans.

Heat the oil on medium heat in a frying pan and add the mixture.

Because the egg is cooked soon, immediately fold it. Remove from the heat.

Nattō-omuretsu

Place on a plate. Pour soy sauce over it, if desired.

This omelet using nattō is a very unique recipe. Nattō is a very healthy food and which normally has a racy flavor. However, by frying it, the racy flavor is reduced.
