Sift the flour and matcha powder together. Beat the eggs and the sugar in a bowl with a beater about 1 minute.

Add the sweet sake for seasoning (mirin), baking soda and 5 ml of water and mix.

Add the flour and matcha powder and mix about 1 minute. Set aside for 20 minutes.

Add 30 ml of water and mix.

Warm a non-stick frying pan. To make each sandwich half, scoop out 3 tablespoons of the mixture and place in the frying pan. Cook on low heat for 2 minutes.

Turn each half over and cook the other side for the same amount of time. Remove from the pan. Make the remaining pancakes in the same manner.

To make one sandwich, place 1/4 of the mashed sweetened red bean paste (anko) on one pancake and spread. Cover with the second pancake. Make the remaining sandwiches in the same manner.
