seared tofu & spinach with soy sauce

step 1:
Wrap the tofu in a paper towel. Heat in a microwave oven for 2 minutes to remove the water. Cut the tofu block in half lengthwise. Then cut each half across 1 time. Finally, place the knife half way down the side of the block and slice across to form 8 bite-size pieces.

step 2:
Cut off the stems of the spinach and cut into about 5 cm. wide pieces.

step 3:
Heat the salad oil in a frying pan over a medium flame and sear the tofu. After the tofu changes color, add the spinach and sear on medium heat.

step 4:
When the spinach becomes soft, add the salt, pepper and soy sauce.

comment:
Searing the tofu gives it a hard outer surface while still keeping the inside soft. Soy sauce is a good accent for spinach and seared tofu.
