Soak the dried wakame seaweed in the 1/2 cup of water for about 15 minutes to reconstitute it. Drain the water.

Cut off the roots of the shimeji mushrooms.

Beat the egg.

Boil the bonito soup stock and add the wakame and shimeji mushrooms.

After boiling, add the soy sauce and salt. Simmer for 30 seconds.

Add the beaten egg. Mix a couple of times. Remove from heat.

The soup becomes mellow with the egg. For rejuvenation, vitamins are also necessary, especially vitamins A, C and E, which are called the "three major rejuvenation vitamins. Egg does not contain vitamin C, biy it contains a lot of vitamin A, which has an antioxidant effect.
