simmered tofu & ground meat with curry powder

ingredients:
- 1 block of tofu
- 7 ounces ground pork or beef
- 2 cloves garlic
- 1/2 ounce ginger
- 3 tablespoons curry powder
- 1 teaspoon soy sauce
- 1 tablespoon sugar
- a little salt
- 3/5 cup chicken stock
- 1 quart water
- 1 tablespoon salad oil
- 2 teaspoons potato starch (katakuriko)
- 2 teaspoons water (for dissolving potato starch)
step 1:
Chop the garlic cloves and ginger into fine pieces.
step 2:
Cut the tofu block in half lengthwise, then cut each half across 3 times. Finally, place the knife halfway down the side of the block and slice across to form 16 bite-size pieces.
step 3:
Pour the 1 quart of water into a pan and add the tofu. Boil for ten minutes on medium heat. Remove and drain the tofu in a colander.
step 4:
Heat the oil in a frying pan or a pan on medium flame. Add the chopped garlic and ginger and sear. Add the ground meat and sear until it changes color.
step 5:
Add the sugar, curry powder, salt and soy sauce and mix.
step 6:
Pour the chicken stock into the pan and bring to a boil.
step 7:
Add the tofu and boil for two minutes.
step 8:
Dissolve the potato starch in the 2 teaspoons of water. Add the dissolved potato starch to the frying pan or the pan. Stir a few times until the mixture becomes creamy.

The curry powder suits tofu and ground meat very well and is delicious. It is a little spicy, but easy to eat.
