vinegar & soy sauce-flavored seared tofu with ground meat

- 1/2 block tofu
- 3 1/2 ounces ground chicken, pork or beef
- 2/3 ounce negi (long green onion) (optional)
- 2 teaspoons soy sauce
- 2 teaspoons rice vinegar
- 2 tablespoons salad oil
step 1:
Wrap the tofu in a paper towel. Heat in a microwave oven for 2 minutes to remove the water. Cut the tofu block in half lengthwise. Then cut each half across 1 time. Finally, place the knife half way down the side of the block and slice across to form 8 bite-size pieces.
step 2:
If you use negi (long green onion), chop it into small pieces.
step 3:
Heat 1 tablespoon of the salad oil in a frying pan. Sear the tofu on a medium flame. After the tofu changes color, sear the opposite side. Remove to two serving plates.
step 4:
Heat the remaining oil in the frying pan and add the ground meat. Sear until it changes color and add the negi (optional). Sear for one more minute.
step 5:
Add the soy sauce and stir. Remove from the heat. Add the rice vinegar and stir.
Place the ground meat mixture over the tofu.

The vinegar-soy sauce flavor gives the ground meat a refreshing taste. The ground meat mixture goes well with the fried tofu.
