Pour the water into a big pan. Bring to a boil and add the dried buckwheat noodles (soba). Follow the cooking instructions on the bag (it is usually best to boil for 5 minutes on high heat.)

After boiling, drain the noodles in a colander and quickly run cold water over them.

Drain again. After cooking, 180 g dried noodles becomes about 450 g cooked noodles.
