ingredients:
- 6 1/3 ounces dried buckwheat noodles
- (soba)
- 2 quarts water

step 1:
Pour the water into a big pan. Bring to a boil and add the dried buckwheat noodles (soba). Follow the cooking instructions on the bag (it is usually best to boil for 5 minutes on high heat.)

step 2:
After boiling, drain the noodles in a colander and quickly run cold water over them.

step 3:
Drain again. After cooking, 6 1/3 ounces dried noodles becomes about 16 ounces cooked noodles.
