ingredients:
- 3 eggs
- 1 serving Fried Rice
- & Chicken with Ketchup or
- Fried Rice with Butter
- 2 tablespoons butter
- 1 tablespoon milk
- a little salt
- a little pepper
sauce:
- 75 g demi-glace sauce
- 2 tablespoons ketchup
- 3 tablespoons red wine

step 1:
To make the sauce, heat the demi-glace sauce, ketchup and red wine in a sauce pan. Stir and simmer for a couple of minutes. Remove from the heat.

step 2:
Beat the eggs, and mix in the milk, salt and pepper.

step 3:
Heat the butter on medium heat in a frying pan and add the egg mixture. Place the Fried Rice & Chicken with Ketchup (or Fried Rice with Butter) on top of the egg mixture.

step 4:
Because the egg is cooked soon, immediately fold it over the fried rice. Remove from the heat.

Place on a plate and pour the sauce over it and serve.

This dish, as well as Rice Stuffed Omelet with Ketchup, is very popular. The demi-glace sauce has a richer taste than ketchup.
