Japanese-Style Shrimp & Avocado Ahijo

  • 10 shrimps
  • 1 ripe avocado
  • 100 g package shimeji mushrooms
  • suitable amount baguette
  • 3 teaspoons soy sauce
  • 1 garlic clove
  • 70 ml olive oil
Step 1

Hull shell and devein the shrimps. Cut off the roots of the shimeji mushrooms. Chop the garlic clove into fine pieces. Cut the avocado in half lengthwise and remove the pit. Then peel each half and cut into 1 cm. wide slices.

Cut the baguette into thin slices.

Put the olive oil and garlic in a frying pan and simmer the garlic for 1 minute.

Add the shrimps, avocado, shimeji mushrooms and soy sauce. Simmer for 5 minutes on low heat.

Ebi to abokado no wafū ahijyo

Serve by either dipping the baguette slices into the ahijo mixture or putting the ahijo on top of the baguettes.

The avocado becomes very soft. This is a delicious combination of ingredients.
