ingredients:
- 2 pieces salmon
- 140 g onions
- 100 g fresh spinach
- a little salt
- a little pepper
- 30 g shredded mozzarella cheese
- 10 g butter
tofu cream sauce:
- 1 block of tofu
- 50 ml chicken broth
- a little salt
- a little pepper
step 1:
Wrap the tofu in a paper towel. Put it on a tray. Place a folded kitchen towel under one side of the tray and lean the tray on it. Let sit for about 30 to 60 minutes.
step 2:
Cut the salmon into bite-size pieces. Cut off the stems of the spinach and cut into about 5 cm. wide pieces. Slice the onion.
step 3:
Heat the butter in a pan and sear the salmon and the onion for about 2 minutes on medium heat. Add the spinach, salt and pepper and sear.
step 4:
Place the tofu and 50 ml chicken broth in a blender, and mix for a couple of minutes.
step 5:
Pour the tofu mixture into a pan and add the salt and pepper. Bring to a boil. Add the seared salmon, onion and spinach (Step 3) and mix.
step 6:
Place in a fireproof dish. Spread the shredded mozzarella cheese over it. Preheat the oven to 250 °C. Bake in the oven at 250 °C for 12 minutes.
