step 1:
Wash the tofu block lightly.

Cut the tofu block in half lengthwise.

Then cut each half across 3 times.

Finally, place the knife half way down the side of the block and slice across to form 16 bite-size pieces. Serve the tofu in a dish.

Chop the leek into thin pieces.

Grate the ginger.

This can be served in two ways. Either sprinkle the tofu with the chopped leek and grated ginger and pour soy sauce over it. Or, serve the chopped leek, grated ginger and soy sauce in a separate small dish. Dip the tofu into the dipping sauce as you eat it.

This dish has a long history. In 1782, the author of a book which included 100 tofu recipes said that because Chilled Tofu is so well-known, it is not necessary to explain it in great detail.
