Spinach sold in Japan is more commonly seen in supermarkets as cooked spinach than as raw salad spinach. Therefore, most spinach dishes in Japanese cuisine are cooked. It is also often used in an egg dish called "Chawan-mushi," in which spinach, chicken, and other ingredients are mixed with beaten egg, Japanese soup stock, and soy sauce and steamed in a cup.
