Nigirizushi

Nigirizushi (nigiri sushi), which often uses fish, is very famous, but inarizushi (inari sushi), which does not use fish, is also popular. Inarizushi is fried bean curd cooked in sweetened soy sauce and filled with sushi rice seasoned with vinegar and sugar. Abura-age is a food made by thinly slicing tofu and deep-frying the slices in oil. Inarizushi with a triangular abura-age, as mentioned elsewhere, is often seen in the Kansai region, with Fushimi Inari, a shrine, in Kyoto being the most famous. Other regions generally use bale-shaped abura-age. Inarizushi can be purchased at many supermarkets, convenience stores, department stores, and sushi restaurants, and is more reasonably priced than nigirizushi.
