Doria is a dish of pilaf, buttered rice or steamed rice topped with a thick sauce such as cream sauce, and usually topped with more cheese and baked in the oven. The prototype of doria is believed to be a dish served by the head chef of a hotel in Yokohama, located near Tokyo, the town developed as an international trading port, around 1930. The doria served at that time consisted of butter rice topped with creamed shrimp and baked in the oven. The typical preparation is to place the rice in a buttered baking dish, cover with a thick sauce, sprinkle shaved Parmesan cheese over the top, and bake in the oven until the surface is browned. There are various types of doria, depending on the ingredients and sauce: seafood doria with shrimp or squid in the sauce, chicken doria with chicken in the sauce, meat doria with cream sauce and meat sauce, curry doria with curry sauce, and so on.
