Japanese Food Tips
Water (Mizu)
June 26, 2017
The water found at probably most shrines in Japan is soft water.
Plastic Tokyo Water bottle
Unlike in many parts of the world, Japanese water is safe and can be used for drinking and cooking without using a water purifier. Because the level of water treatment is so high in Tokyo, its tap water is even sold in plastic bottles. Japanese households use soft water, and Japanese food is suitable for cooking with soft water. All of our recipes are softwater-based. Those who like the taste of Japanese food but who are cooking with hard water, how about using soft water once? Especially for making miso soup, boiling rice or cooking Japanese soup stock, it may be better to use soft water.
