Do you know UMAMI? It is a savory taste and it is indispensable in Japanese food. Dashi (soup stock) making from bonito flakes is the most popular in UMAMI. The soup stock is often used in miso soup and soup of udon (thick white noodles), soba (buckwheat noodles) or nabe (one-pot dish). The soup stock is very amazed delicious. Bonito flakes (kezuribushi) are dried bonito (katsuobushi) shavings. Dried bonito is boiled and smoked. By the way, bonito flakes are possible to eat for sprinkling over vegetables. Because bonito soup stock powder is convenient and easy, many Japanese may use bonito soup stock powder than use bonito flakes. Our recipe is two ways of using bonito flakes and powder to make bonito soup stock. Please use it if you like.
