Daikon (Japanese radish) is a vegetable often used in Japanese cooking. Daikon can be found at every grocery store and supermarket all year round, but especially in the winter. Daikon harvested in the winter have a sweeter taste than summer daikon, which tend to be hotter tasting. Daikon is often simmered. One such dish is oden which has a bonito and dried sea tangle soup stock base and contains many ingredients such as a tube-shaped fish paste cake, fish paste balls, pounded fish cake, boiled eggs, as well as daikon. Daikon can also be eaten raw in such dishes as tsukemono (Japanese pickles), grated radish and tsuma (shredded daikon) which is almost always served with sashimi. If you would like to eat daikon in Japan, the easiest thing to do is to buy oden at convenience stores because it is sold there year round.
