
ingredients:
- 7 ounces sweet potato
- 1 ounce onion
- 2 tablespoons butter
- 1/2 cup chicken broth or soup stock
- 2 cups milk or fresh cream
- a little salt

step 1:
Peel the sweet potato and cut in half. Slice each half into thinly slices. Peel the onion and slice thinly.

step 2:
Heat the butter in a pan and saute the sliced sweet potato and chicken broth until the sweet potato slices become soft.

step 3:
Place the sauteed sweet potato, onion and soup in a blender or mixer, and mix very well.

step 4:
Pour the mixture into a pot and heat. Add the milk (or fresh cream) and bring to a boil on medium heat. Stir in the salt and remove from the heat.

comment:
This soup has just the right sweetness if you use Japanese sweet potato. The soup becomes creamier if you use fresh cream.
