Scallops & Green Soybeans Seasoned Rice

  • 5 ounces scallops
  • 7 ounces fresh green soybeans
  • (or frozen green soybeans)
  • 10 ounces rice
  • 2 1/2 cups water
  • 2 tablespoons soy sauce
  • a little salt (if using fresh green soybeans)
Step 1

Cut the scallops into 1/2 in. pieces.

If using frozen green soybeans, defrost them and remove the green beans from the pods.

If using fresh green soybeans, wash and drain them. Bring 1 cup of the water to a boil, and add the salt and green soybeans. Bring to a boil again, and boil for three to four minutes.

Drain the soybeans in a colander and remove the green beans from the pods.

Wash the rice. Add the remaining 1 1/2 cups of water, scallops, green soybeans and soy sauce. Switch on the rice cooker.

After cooking, wait 5 minutes before stirring the rice mixture.

Hotate to edamame no takikomi-gohan

The umami of the scallops soaks into the rice and is delicious. Green soybeans suit the scallops well. Please try this dish.
