

ingredients:
- 14 ounces raw tuna
- 2 long green onion
- 5 tablespoons soy sauce
- 5 tablespoons sugar
- 4 cups bonito and sea tangle soup stock or bonito soup stock

step 1:
Cut the raw tuna into bite-size pieces.

step 2:
Cut into about 2 in. wide pieces.

step 3:
Boil the bonito and sea tangle soup stock (or bonito soup stock). Add the sugar and soy sauce. Bring to a boil. Add the tuna and green onion, and cover. Boil for 8 minutes.

Serve in individual serving bowls.

This dish is a traditional recipe from the latter part of the Edo period (1603-1868). The sweetened soy sauce soup and long green onion reduce the tuna smell very well, and the tuna becomes delicious.
