- 15 ounces cooked
- buckwheat noodles (soba)
- 1 ounce scallions or chives
- 1 1/2 tablespoons soy sauce
- a little salt
- 2 tablespoons salad oil
- 1 tablespoon ground sesame (optional)

step 1:
Chop the scallions (or chives).

step 2:
Heat the salad oil in a frying pan and sear the noodles on medium heat.

step 3:
Add the salt and soy sauce. Saute and stir for a couple of minutes.

step 4:
Place in a dish. Sprinkle the chopped scallions (or chives) and ground sesame (optional) over the top and serve.

This is a very unusual style dish because it is stir fried, unlike most soba which is always boiled. It is especially delicious with ground sesame.
