Simmered Hijiki
Ingredients

  • 1 ounce dried hijiki
  • 4 ounces carrot
  • 4 tablespoons soy sauce
  • 2 1/2 tablespoons sugar
  • 1 1/2 cups water
  • 1 liter water for soaking

Soak the dried hijiki in the 1 liter of water in a bowl for 30 minutes and drain.

Cut the carrot into julienne slices.

Cut the abura-age (optional) in half lengthwise. Stack them and cut into 4 equal strips.

Slice the chikuwa (optional).

Pour the 1 1/2 cups of water into a pan. Add the hijiki, carrots, chikuwa, abura-age, boiled green peas (optional), sugar and soy sauce. Cover and boil on a medium flame for about 20 minutes.
