
ingredients:
- 80 g spinach
- 2 abura-age
- 800 ml bonito soup stock
- 3 tablespoons white or red miso

step 1:
Cut off the stems of the spinach and wash it. Cut the spinach into 5 cm. long pieces.

step 2:
Cut the abura-age in half, then cut each half into 4 equal strips.

step 3:
Boil the bonito soup stock. Add the spinach and abura-age strips.

step 4:
After boiling, put some stock into a ladle. Add the white or red miso and stir with chopsticks until it is dissolved. Stir into the soup. Remove from heat.

The spinach becomes very soft and suits abura-age well in this delicious soup.
