

step 1:
Wrap the tofu in a paper towel. Put in a tray. To drain the water, place a folded kitchen towel under one side of the tray and lean the tray on it. Let sit for about 30 minutes. Remove the tofu and cut it into 4 pieces.

step 2:
Add the water, sake, red miso, sugar, soy sauce, tofu and eggs in a pan. Cover and boil for 15 minutes on medium heat.

step 3:
Remove the eggs and cut them in half. Place on a plate together with the tofu and sauce.

This dish is very easy cooking. The sweet miso sauce suits the tofu and eggs.
