tofu cream gratin with salmon

ingredients:

  • 2 pieces salmon
  • 5 ounces onions
  • 3 1/2 ounces fresh spinach
  • a little salt
  • a little pepper
  • 1 ounce shredded mozzarella cheese
  • 1/3 ounce butter

tofu cream sauce:

  • 1 block of tofu
  • 1/5 cup chicken broth
  • a little salt
  • a little pepper

step 1:

Wrap the tofu in a paper towel. Put it on a tray. Place a folded kitchen towel under one side of the tray and lean the tray on it. Let sit for about 30 to 60 minutes.

step 2:

Cut the salmon into bite-size pieces. Cut off the stems of the spinach and cut into about 2 in. wide pieces. Slice the onion.

step 3:

Heat the butter in a pan and sear the salmon and the onion for about 2 minutes on medium heat. Add the spinach, salt and pepper and sear.

step 4:

Place the tofu and 1/5 cup chicken broth in a blender, and mix for a couple of minutes.

step 5:

Pour the tofu mixture into a pan and add the salt and pepper. Bring to a boil. Add the seared salmon, onion and spinach (Step 2) and mix.

step 6:

Place in a fireproof dish. Spread the shredded mozzarella cheese over it. Preheat the oven to 480 °F. Bake in the oven at 480 °F for 12 minutes.
