Tempura soba is boiled soba noodles topped with a soy sauce-based broth, and popularly served with shrimp tempura or kakiage, a type of tempura consisting of small pieces of vegetables and seafood, coated with a flour batter, and deep-fried in cooking oil. Soba and tempura go well together. The reasons for this are as follows. First, the aroma and flavor of soba enhances that of tempura's fried oil. And, the aroma of soba made from buckwheat flour is very unique and is considered to be a good match because its aroma does not overpower the smell of the tempura's fried oil.
