how to rehydrate glass noodles

  • 50 g dried glass noodles (harusame)
  • (Refer to the package to determine the amount
  • the dried noodles will revert to when boiled.
  • Depending on the manufacturer, the amount
  • can be anywhere from three to eight times.)
  • Water (50 g harusame needs at least 600 ml water)

If using a microwave oven, go to Step 2. If not, bring water to a boil in a pot, add the glass noodles, and boil over medium heat for a couple of minutes, stirring occasionally with chopsticks. Go to Step 3.

If the harusame does not fit in a heatproof container, fold it in two before placing in the container. Pour enough water over the noodles to cover them. Cover with plastic wrap and microwave at 600W for 5 minutes.

Cool the drained boiled glass noodles. If more easily edible length is needed, place on a cutting board and cut into 2 or 3 equal pieces while still firm.
