I love Japanese food. The greatest element in the character of Japanese food is that it gives me the distinctive flavors of the changing seasons, centered on low-calorie, nutrient-rich ingredients. And, it's really beautiful to look at.
Serving presentations range from simple to magnificent, drawing out the flavors while raising the finish to the level of art. Tableware uses materials such as lacquer and ceramics, and the patterns and images that adorn them enliven the table with talk of the places they were made and the people who made them. That kind of Japanese dining space is what I like best.
