Daifuku mochi is a traditional popular confection in Japan. It is usually called daifuku. It is round with an outer layer usually made from glutinous rice flour, and is filled with anko, mashed sweetened red bean paste. It is soft and chewy like mochi (rice cake). The combination of sweetness and chewy filling makes a unique confection. Actually, there are many kinds of daifuku, mame daifuku and ichigo daifuku being the most famous among them. Mame daifuku has red peas kneaded into the outer layer. The red peas make the daifuku taste more enjoyable. Ichigo daifuku is round with one strawberry at the center, covered with anko and surrounded with an outer layer of glutinous rice flour. The combination of the three ingredients gives it an exquisite taste. There are other types of fruit daifuku such as chestnut, orange, peach, melon, and so on.
