Japanese noodles culture is thriving in Japan. Although Koreans are famous for eating cold noodles, it’s not popular in many other Asian countries. Typical noodles are udon (thick white noodles) and soba (buckwheat noodles). Japanese eat cold udon and soba in the hot season, and also eat chilled noodles called somen (thin white noodles) thinner than udon. Cold soba is eaten year-round. After these noodles are boiled, they are rinsed with water and served with cold dipping sauces or in cold soups. The sauces and soups are made from soy sauce and soup stock. There is also chilled ramen, called hiyashi-chuka, which is available only in Japan. We have provided some cold noodles recipes. Please check them out if you like.
